Based on traditional gingerbread craftsmanship.
Gingerbread was around at a time when there was no sugar and no baking powder. Originally, gingerbread was a type of bread loaf sweetened with honey and enhanced with oriental spices. The producers of the gingerbread were known as ”Gingerbread Makers”.
At the Leysieffer Manufaktur we have kept to the traditional recipes where possible. Honey instead of sugar, made by hand instead of machines. Also, not forgetting, made slowly instead of quickly. Our gingerbread dough takes 18 months to ripen and fully develop its flavor. This is all made possible by using a high proportion of bee’s honey (30%) which not only contributes to the excellent taste of the gingerbread but also acts as a natural preservative.
The only “modern” features that we contribute to our gingerbread products are our extraordinary fillings made from marzipan or dried fruits, milk, dark or white chocolate coatings and elaborate embellishments.
